How to Make the Perfect Low-Carb, Keto Carrot Cake
This week we are baking up one of our absolute favorite spiced cakes brought to you by the King of Keto himself, Sugarless Crystals. This deliciously moist, spiced cake will have you wondering why you ever ate sugar in the first place. Pair with cream cheese frosting and walnuts or pecans for the perfect low carb, keto carrot cake. Let's get baking!
Low Carb, Keto Carrot Cake Recipe:
Ingredients:
Dry Ingredients
- 1 3/4 cup blanched almond flour
- 3 tablespoon coconut flour
- 1/4 cup granulated Allumonk sweetener
- 1/4 cup swerve brown sugar alternative
- 1/8 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking soda
Wet Ingredients
- 3 large eggs
- 6 tablespoon melted butter
- 1 tablespoon vanilla extract
- 1 tablespoon blackstrap molasses or sugar free maple syrup
- 1 teaspoon liquid stevia or liquid monk fruit (optional for added sweetness)
- 1 tablespoon vinegar or lemon juice
Mix ins
- 1 cup freshly grated carrots (110g)
- 1/4 cup chopped walnuts or pecans
Cream Cheese Frosting
- 4 ounces cream cheese
- 1 tablespoon sour cream
- 2 tablespoon powdered sweetener
- 1/2 teaspoon vanilla extract
Instructions:
* Use a 9 inch baking pan. Double recipe for a 2 layer cake!
Carrot Cake
- Preheat oven to 350°F

Grate carrots if using them. If you choose to buy pre-shredded that is fine

Combine all dry ingredients in a mixing bowl

In a separate bowl combine all wet ingredients

mix the dry and wet ingredients and scraping the sides of the bowl to make sure everything is combined

If using carrots or nuts fold them in here

Place in preheated oven for 30-35 minutes or until you can stick a toothpick in and it comes out clean
Cream Cheese Frosting

Cream sour cream and cream cheese together

Next mix in powdered sweetener. Then mix until smooth
