Bloom gelatin in cold water by adding powder to small bowl and adding the water on top. Give a short whisk then set aside.
With a hand mixer blend peanut butter and sweetener together. Place gelatin in microwave for a maximum of 10 seconds. Add vanilla extract, sour cream and melted gelatin into peanut butter then mix until smooth.
In a separate bowl blend heavy cream until it forms stiff peaks
Spoon peanut butter into the fluffy heavy cream and blend on a very low speed until combined. Scape sides and if any mousse hasn't mixed just fold it in.
Helpful Recipe Tips
Don't overheat gelatin. Ten seconds is the max you don't want to melt your heavy cream when added.
Sub almond butter for peanut butter?Sure, go for it! Any nut butter will work well in this recipe.
Add chocolate, whipped cream or both to really bump up the recipe. Chocolate and peanut butter will always be classics.
